Upright Brewing specializes in farmhouse inspired beers rooted in France and Belgium, but made with a Pacific Northwest twist, dabbling in both classic and quirky projects from around the world. The name references the primary instrument of Charles Mingus, a musician whose compositions, like Upright’s brews, defy categorization. At Upright, the recipes and processes are decidedly unbound, making for true hybrid styles that share Mingus’ spirit of exercising creativity and craft.

Sherry Finish Vanilla Quad is a celebratory brew made for our tenth anniversary. A big, complex beer that started in our open fermenter and later matured in a new foeder, the quad spent it's final weeks in sherry casks with whole Madagascar vanilla beans. Layers of fruit and caramel notes fill in around the vanilla making for a fun but heavily nuanced flavor.

Pinot Barrel Four was our second batch. We took the recipe for the Four and sent the beer into some oak barrels graciously donated by La Bete winery of McMinnville, topping them up with a small amount of Oregon cherry puree along with lactobacillus and brettanomyces claussenii to encourage more acidity and aromatic complexity in the finished beer. Half of the batch was blended and kegged and can be found at a few specialty bars while the remaining half is still maturing in the barrels and will likely be bottled at some point towards the end of 2009.
