Upright Brewing specializes in farmhouse inspired beers rooted in France and Belgium, but made with a Pacific Northwest twist, dabbling in both classic and quirky projects from around the world. The name references the primary instrument of Charles Mingus, a musician whose compositions, like Upright’s brews, defy categorization. At Upright, the recipes and processes are decidedly unbound, making for true hybrid styles that share Mingus’ spirit of exercising creativity and craft.

Fresh Hop Pub Ale makes elegant use of fresh citra hops in a flavorful, low alcohol brew designed for sessionability. Starting as a well balanced, open fermented base beer made with Yorkshire ale yeast, a light addition of the farm fresh citra hops during fermentation lends this Pub Ale complex fruit notes that play well with the yeast expression.

A collaboration with Aslan Brewing. It’s a session wheat beer hopped exclusively with citra and open fermented with our blend of Voss Kveik and a secondary strain called Metschnikowia Reukaufii. The beer should finish like a well hopped blonde farmhouse.

West Coast Ghost takes our award winning WW Pro/Am beer from last summer and transforms it through a specific set of barrels – pinot, nocino, and fortified muscat, all of which add extra layers to the already complex brew that incorporated Nepali and sansho peppercorn and fresh Russian sage. A small addition of black lime just before kegging is the final touch.
